🔍 How We Make Our Cherries in Syrup
Fresh cherries are mechanically harvested from our own orchards and collected in containers filled with cold water. This ensures maximum freshness and firmness from the outset. The containers are transported immediately to our factory, where the transformation process begins.
- Initial Washing and Optical Sorting
The cherries are washed with water and passed through an optical sorter that eliminates leaves, stems, and defective fruits (stained, cracked, etc.), ensuring only top-quality raw material proceeds to the next stages. - Precise Calibration
The cherries are sorted into up to three different sizes, allowing us to tailor our product to the specific needs of each customer and application. - Mechanical Pitting
Once calibrated, the cherries are pitted using special punches that extract the stone with great precision, preserving the fruit’s shape and texture. - Manual Selection
Our team conducts a final visual inspection to remove any cherries that do not meet our quality standards—those that are soft, broken, stained, etc. - Filling and Sealing
The selected cherries are filled into containers along with a syrup made from sugar and food-grade coloring to achieve the specified Brix level. The containers are then hermetically sealed. - Controlled Pasteurization
Finally, the containers are pasteurized in a tunnel system to ensure the product’s microbiological stability, guaranteeing food safety and a shelf life of at least 3 years from production date.
This efficient process is completed within just a few hours, allowing us to preserve the physicochemical, organoleptic, and qualitative properties of the natural cherry.
