At Conservas Lazaya, each harvesting cherries season means much more than just a harvest—it’s the beginning of a carefully controlled process that ensures the quality of our candied cherries and cherries in syrup. Because we grow our own cherry varieties and dedicate all production to our in-house processing, we can guarantee full traceability, from the tree to the jar.

Harvesting Cherries Mechanically: Precision and Efficiency
Our cherries are harvested mechanically using equipment that applies controlled vibrations to the trunk of the cherry tree. This technique allows ripe fruit to fall gently onto tarps placed around the tree, from which a conveyor belt carefully transfers them into containers.
This system allows us to work quickly and efficiently, minimizing the impact on the tree and ensuring the harvested fruit retains its quality for subsequent processing.
Transport Adapted to Each Variety after Harvesting Cherries
Each type of cherry requires different handling depending on the processing method it will undergo:
- Rainier/Napoleon Cherry → This variety is used to make our candied cherries. After harvesting, it is transported in preservation brine, a medium that protects the fruit and stabilizes its characteristics until it is stored at room temperature in airtight containers.
- White of Provence Cherry → This variety is destined for our cherries in syrup. In this case, the fruit is transported in cold water, which helps maintain freshness during transit. Once at the factory, it is stored in refrigerated chambers and processed within a maximum of 48 hours to ensure firm texture, delicate color, and balanced flavor.
This differentiated treatment is key to preserving the unique qualities of each variety and guaranteeing the excellence of the final product.
